CASSIA or Cinnamon is the dried bark of laurel trees. It looks woody and has a sweet woody aroma. It has a soothing and pleasant fragrance.
Thinner the bark, better the quality. Generally used as whole bark.
It is widely used in curries, rice preparations, poultry and fish preparations.
